  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, combine soy sauce and brown sugar until dissolved. Add minced garlic, grated ginger, olive oil, lime juice, and mix well.
  2. Place chicken in a resealable bag or bowl; pour half of the marinade over it. Allow to marinate for at least 30 minutes at room temperature or overnight in the fridge.
  3. Preheat grill to medium-high (400°F) or oven to 375°F (190°C).
  4. Grill chicken for 6–8 minutes on each side, basting with leftover marinade. Alternatively, arrange in a baking dish with remaining marinade and bake for about 30 minutes.
  5. Ensure chicken reaches an internal temperature of 165°F (75°C). Let rest before serving and garnish with fresh cilantro.
