  • 1/3 cup fresh basil leaves (chopped)
  • 5 garlic cloves
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 baguette
  • Optional: balsamic glaze for drizzling
  • Optional: 1/3 cup shredded parmesan cheese

Instructions

  1. Dice the Roma tomatoes and place them in a mixing bowl.
  2. Add chopped basil, minced garlic (save one clove), balsamic vinegar, olive oil, sea salt, and black pepper to the tomatoes. Stir gently to combine.
  3. Let the mixture marinate at room temperature for 15-30 minutes.
  4. Preheat the oven to 400°F (200°C). Slice the baguette diagonally into half-inch pieces.
  5. Arrange slices on a baking sheet, brush with olive oil, and sprinkle with sea salt. Bake for about 5-7 minutes until golden brown.
  6. Rub the reserved garlic clove on each toasted slice for added flavor.
  7. Spoon the tomato mixture onto each toast and drizzle with balsamic glaze if desired.
