  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 (400g) can white beans, drained and rinsed
  • 90ml buffalo hot sauce
  • 100g sour cream
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon cumin
  • Salt and pepper to taste
  • 150g shredded cheddar and mozzarella cheese
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a frying pan over medium heat. Add diced red onion and sauté for about 5–6 minutes until softened.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the rinsed white beans, buffalo hot sauce, and sour cream until well combined.
  4. Mix in smoked paprika, cayenne pepper, oregano, cumin, salt, and pepper. Mash half of the beans slightly for a creamier consistency.
  5. Spoon the bean mixture onto one half of each tortilla, top with shredded cheese, then fold.
  6. Fry each taco in a lightly oiled pan over medium heat for about 2 minutes on each side until golden brown and crispy.
  7. Garnish with chopped cilantro before serving.
