  • 4 cloves garlic (minced)
  • ¼ cup finely diced white onion
  • 1 ½ cups medium grain rice (rinsed)
  • 10 ounces frozen corn
  • 3 cups boiling water
  • 1 tablespoon chicken bouillon
  • Optional: chopped parsley and sliced green onion for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium-low heat until melted.
  2. Add minced garlic and diced onion; sauté for about 30 seconds until softened.
  3. Stir in rinsed rice and toast for approximately 5 minutes until lightly golden.
  4. Add frozen corn; mix well.
