  • 1 ring (13.5 oz) chicken or turkey sausage, sliced
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ red bell pepper, diced
  • 2 tsp minced garlic
  • 1 tsp Cajun seasoning
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Chopped parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the sliced sausage and cook until golden brown, about 3–4 minutes. Remove and set aside.
  2. In the same pot, sauté onions, celery, and red bell pepper until softened, about 5–8 minutes. Stir in garlic and cook for an additional minute.
  3. Add Cajun seasoning, salt, black pepper, paprika, and cayenne; stir well to combine.
  4. Pour in chicken broth and add cubed potatoes. Bring to a boil, then reduce heat to simmer for about 20–25 minutes until potatoes are tender.
  5. Stir in cream and cheese until melted and smooth; reintroduce the sausage. Heat through without boiling.
  6. Serve hot with chopped parsley on top.
