  • 1/2 cup finely shredded carrot
  • 1/2 cup pure maple syrup (or honey/agave)
  • 1/4 cup milk of choice or water
  • 1/4 cup oil (vegetable or coconut)
  • 2 tsp pure vanilla extract
  • Optional: crushed walnuts or coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, combine the flour, baking soda, cinnamon, baking powder, salt, and optional nutmeg; whisk until well blended.
  3. In another bowl, mash the bananas and mix in the shredded carrots, maple syrup (or honey/agave), milk (or water), oil, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined. Avoid overmixing.
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake for approximately 45 minutes or until a toothpick inserted in the center comes out clean.
