2 medium chicken breasts (cut into bite-sized pieces)
6 slices turkey bacon (cut into small pieces)
1 large clove garlic (minced)
1/2 cup chicken broth
1 cup heavy cream
1/4 teaspoon Italian seasoning
1 pound uncooked potato gnocchi
1/2 cup freshly grated parmesan cheese
Salt & pepper (to taste)
Instructions
In a deep skillet over medium-high heat, cook the turkey bacon until crispy (about 10 minutes). Remove bacon while retaining a tablespoon of rendered fat.
Add chicken pieces to the skillet and cook until white on all sides (2-3 minutes).
Stir in minced garlic and cook briefly until fragrant.
Pour in chicken broth, then add heavy cream and Italian seasoning; stir well.
Gently fold in the gnocchi and cooked bacon. Cover and simmer for about 4 minutes.
Uncover and continue cooking for a few more minutes until the sauce thickens.
Stir in grated parmesan cheese, season with salt and pepper, and serve warm.
