  • 2 medium chicken breasts (cut into bite-sized pieces)
  • 6 slices turkey bacon (cut into small pieces)
  • 1 large clove garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 teaspoon Italian seasoning
  • 1 pound uncooked potato gnocchi
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. In a deep skillet over medium-high heat, cook the turkey bacon until crispy (about 10 minutes). Remove bacon while retaining a tablespoon of rendered fat.
  2. Add chicken pieces to the skillet and cook until white on all sides (2-3 minutes).
  3. Stir in minced garlic and cook briefly until fragrant.
  4. Pour in chicken broth, then add heavy cream and Italian seasoning; stir well.
  5. Gently fold in the gnocchi and cooked bacon. Cover and simmer for about 4 minutes.
  6. Uncover and continue cooking for a few more minutes until the sauce thickens.
  7. Stir in grated parmesan cheese, season with salt and pepper, and serve warm.
