  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp cornstarch
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 medium onion
  • 2 cloves garlic
  • 1 tbsp ginger
  • 3 tbsp soy sauce
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 2 tsp Sriracha
  • ½ cup water
  • 1 tbsp sesame oil
  • 2 tbsp chopped green onions (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • 4 cups cooked rice

Instructions

  1. Prepare ingredients by chopping vegetables and mincing garlic and ginger.
  2. In a bowl, combine soy sauce, honey, rice vinegar, ginger, minced garlic, and set aside.
  3. Heat sesame oil in a skillet over medium-high heat. Pat dry the chicken thighs and sear for about 5-7 minutes per side until golden brown; remove from skillet.
  4. Add chopped onions and bell peppers to the skillet; sauté for about 4 minutes until softened. Stir in minced garlic and ginger; cook until fragrant.
  5. Return chicken to the skillet, pour in the sauce mixture, and add water. Let simmer for 5 minutes until sauce thickens.
  6. Serve over cooked rice and garnish with green onions and sesame seeds.
