  • ¼ cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon salted butter
  • ½ cup dry white grape juice (non-alcoholic)
  • 4 cloves garlic (thinly sliced)
  • 2 tablespoons capers (drained)
  • 1 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cold salted butter (for finishing)
  • ¼ cup fresh parsley (roughly chopped)

Instructions

  1. Place chicken breasts between plastic wrap and pound to an even thickness. Season both sides with salt and pepper.
  2. Combine flour, Parmesan cheese, and garlic powder in a shallow bowl. Dredge chicken in the mixture until fully coated.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for about five minutes on each side until golden brown. Remove from skillet and keep warm.
  4. In the same skillet, sauté sliced garlic and capers until fragrant. Add dry white grape juice, followed by chicken broth and lemon juice; simmer for five minutes until slightly reduced.
  5. Stir in cold butter to finish the sauce, then return the chicken to the skillet for another few minutes.
  6. Serve hot, garnished with fresh parsley.
