  • 1/2 cup parsley (finely chopped)
  • 4 cloves garlic (minced)
  • 1 Fresno pepper (seeded and minced)
  • 1 tsp dried oregano
  • 1/2 cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 lb jumbo shrimp (peeled and deveined)
  • 3 tbsp olive oil for cooking
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine parsley, garlic, Fresno pepper, oregano, olive oil, apple cider vinegar, salt, and pepper to create the chimichurri sauce.
  2. In another bowl, mix shrimp with olive oil, garlic, smoked paprika, salt, and pepper.
  3. Pour the chimichurri sauce over the shrimp and let marinate for at least 15 minutes.
  4. Preheat your grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
  5. Drizzle any remaining chimichurri sauce over the cooked shrimp before serving.
