- 1/2 cup parsley (finely chopped)
- 4 cloves garlic (minced)
- 1 Fresno pepper (seeded and minced)
- 1 tsp dried oregano
- 1/2 cup extra virgin olive oil
- 3 tbsp apple cider vinegar
- 1 lb jumbo shrimp (peeled and deveined)
- 3 tbsp olive oil for cooking
- Salt and pepper to taste
- In a mixing bowl, combine parsley, garlic, Fresno pepper, oregano, olive oil, apple cider vinegar, salt, and pepper to create the chimichurri sauce.
- In another bowl, mix shrimp with olive oil, garlic, smoked paprika, salt, and pepper.
- Pour the chimichurri sauce over the shrimp and let marinate for at least 15 minutes.
- Preheat your grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Drizzle any remaining chimichurri sauce over the cooked shrimp before serving.
