  • 1 lb jumbo shrimp (peeled and deveined)
  • 1/2 cup parsley (finely chopped)
  • 4 cloves garlic (minced)
  • 1 Fresno pepper (seeded and minced)
  • 1 tsp dried oregano
  • 1/2 cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine parsley, garlic, Fresno pepper, oregano, apple cider vinegar, olive oil, salt, and pepper to create the chimichurri sauce.
  2. Pour half of the chimichurri sauce over the shrimp in another bowl and toss to coat. Let it marinate for at least 15 minutes at room temperature.
  3. Preheat a grill pan or outdoor grill over medium-high heat. Lightly oil the surface if desired.
  4. Grill shrimp for about 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes until fully cooked through.
  5. Serve the grilled shrimp drizzled with remaining chimichurri sauce.
