Ingredients

Scale
  • 3/4 cup ketchup
  • 2/3 cup beef broth
  • 1/2 cup honey
  • 1 pound boneless, skinless chicken breasts or thighs
  • 6 to 8 ears of corn (2.5 cups kernels)
  • 1 cup heavy cream
  • 2 tablespoons apple cider vinegar
  • 5 cloves minced garlic
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine ketchup, beef broth, honey, minced garlic (3 cloves), apple cider vinegar, Dijon mustard, Worcestershire sauce, onion powder, smoked paprika, and black pepper. Whisk until well combined and bring to a gentle boil over medium heat. Reduce heat and simmer for 30-60 minutes.
  2. Preheat the grill to high heat. Season chicken with salt, pepper, and garlic powder. Brush BBQ sauce onto chicken before grilling.
  3. Grill chicken for about 10 minutes until cooked through (internal temperature should reach 160°F). Let rest for at least 10 minutes before slicing.
  4. While chicken rests, grill corn for approximately 15 minutes until charred. Cut kernels off the cob.
  5. In a saucepan over medium heat, melt butter and sauté minced garlic (2 cloves) until fragrant. Add corn kernels and cook for another five minutes.
  6. Pour in heavy cream and milk; stir in sugar and let simmer until thickened (about 5 minutes). Mix in Parmesan cheese and season with salt and pepper.
