  • 1/2 cup tightly-packed fresh cilantro
  • 1/4 cup freshly-squeezed lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper
  • 3 green onions (just the green parts), chopped
  • 2 garlic cloves, minced
  • (optional) 1 jalapeño or serrano pepper, stemmed and cored
  • 1 (14-ounce) bag cole slaw mix (about 78 cups)

Instructions

  1. In a blender or food processor, combine Greek yogurt, cilantro, lime juice, cumin, salt, pepper, green onions, garlic, and optional pepper. Blend until smooth but still slightly textured.
  2. In a large mixing bowl, add the cole slaw mix. Pour the dressing over the mix and toss gently until fully coated.
  3. Allow the slaw to sit for at least 15 minutes to let flavors meld before serving.
  4. Taste and adjust seasonings if necessary before serving chilled.
