  • 2 tablespoons extra virgin olive oil (plus more for brushing)
  • 1 baguette sliced on a diagonal into ½ inch slices
  • ½ cup balsamic vinegar (for glaze)
  • 3 tablespoons brown sugar

Instructions

  1. Start by finely dicing your garden-fresh tomatoes into small pieces and place them in your mixing bowl along with half a teaspoon of salt. Allow them to sit undisturbed at room temperature for 20 to 30 minutes.
  2. Drain off excess juice carefully before introducing minced garlic cloves along torn basil leaves plus freshly ground black pepper into bowl containing marinated tomato mixture—gently fold these new elements through until fully incorporated.
  3. Preheat oven to 400°F (200°C). Brush both sides generously using extra virgin olive oil on baguette slices and place them on a parchment-lined baking sheet. Bake initially for five minutes then flip slices over and bake additional two to three minutes until golden brown.
  4. Combine half cup balsamic vinegar along three tablespoons brown sugar inside small saucepan placed over medium heat stirring occasionally until sugar dissolves. Let simmer for approximately ten minutes until reduced significantly.
  5. Top toasted baguette slices with the tomato mixture and drizzle with balsamic glaze.
