  • 1 diced cucumber
  • 1/2 cup finely diced red onion
  • 1 pint halved cherry tomatoes
  • 6 oz kalamata olives
  • 6 oz crumbled feta cheese
  • 1.5 tbsp fresh parsley
  • 1.5 tbsp fresh cilantro
  • 1.5 tbsp minced garlic
  • 1/2 tsp red pepper flakes
  • 2.5 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp Dijon mustard
  • 2 tsp honey
  • 1/2 tsp dried oregano
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Rinse and drain the chickpeas. Transfer them to a large mixing bowl.
  2. Chop the cucumber into 1/2-inch pieces, dice the red onion finely, and halve the cherry tomatoes. Add these vegetables to the bowl.
  3. Slice the kalamata olives in half and add to the mixture along with crumbled feta cheese.
  4. In a separate bowl, whisk together apple cider vinegar, lemon juice, olive oil, Dijon mustard, honey, oregano, cumin, red pepper flakes, salt, and pepper until well combined.
  5. Pour the dressing over the salad ingredients and gently toss to combine.
  6. Let marinate in the refrigerator for at least 30 minutes before serving for best flavor.
