  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 1/2 cup chopped pistachios
  • 1 cup shredded sweetened coconut
  • 4 oz cream cheese (softened)
  • 1/4 cup butter (softened)
  • 2 tsp vanilla extract
  • 1 tsp coconut extract
  • 34 cups powdered sugar
  • 1/2 cup chopped pistachios (for garnish)
  • 1/2 cup toasted coconut (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, combine flour and baking powder.
  3. In another bowl, cream melted butter and sugar until light and fluffy. Add egg, milk, vanilla extract, and coconut extract; mix well.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fold in chopped pistachios and shredded coconut.
  5. Pour batter into prepared pan and spread evenly. Bake for 14-16 minutes until edges are golden.
  6. Allow bars to cool completely before frosting.
  7. For the frosting, beat softened cream cheese and butter until creamy; add vanilla and coconut extracts, then gradually mix in powdered sugar until desired consistency is reached.
  8. Spread frosting over cooled bars and garnish with extra chopped pistachios and toasted coconut.
