  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons unsalted butter
  • ¼ cup diced yellow onion
  • ¼ cup diced celery
  • ¼ cup diced green bell pepper
  • ¾ cup mayonnaise
  • ¾ cup plain Italian breadcrumbs
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Worcestershire sauce (or soy sauce)
  • ½ pound lump crab meat
  • 2 pounds center-cut Atlantic salmon (skin removed)
  • Kosher salt and freshly ground black pepper (as needed)

Instructions

  1. Preheat your oven to 400ºF (200ºC).
  2. In a large sauté pan over medium heat, heat olive oil and melt butter. Add onion, celery, and green bell pepper; sauté until tender.
  3. In a mixing bowl, combine sautéed vegetables with mayonnaise, breadcrumbs, lemon juice, Worcestershire sauce, and lump crab meat. Mix gently.
  4. Season salmon fillets with salt and pepper on both sides. Spread the crab mixture evenly over each fillet.
  5. Roll each salmon fillet tightly into pinwheels and secure with toothpicks if necessary.
  6. Place pinwheels cut-side up on a lined baking sheet, sprinkle with additional seasoning if desired.
  7. Bake for 15-18 minutes until cooked through and flaky.
