- 4 tablespoons unsalted butter
- ¼ cup diced yellow onion
- ¼ cup diced celery
- ¼ cup diced green bell pepper
- ¾ cup mayonnaise
- ¾ cup plain Italian breadcrumbs
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Worcestershire sauce (or soy sauce)
- ½ pound lump crab meat
- 2 pounds center-cut Atlantic salmon (skin removed)
- Kosher salt and freshly ground black pepper (as needed)
- Preheat your oven to 400ºF (200ºC).
- In a large sauté pan over medium heat, heat olive oil and melt butter. Add onion, celery, and green bell pepper; sauté until tender.
- In a mixing bowl, combine sautéed vegetables with mayonnaise, breadcrumbs, lemon juice, Worcestershire sauce, and lump crab meat. Mix gently.
- Season salmon fillets with salt and pepper on both sides. Spread the crab mixture evenly over each fillet.
- Roll each salmon fillet tightly into pinwheels and secure with toothpicks if necessary.
- Place pinwheels cut-side up on a lined baking sheet, sprinkle with additional seasoning if desired.
- Bake for 15-18 minutes until cooked through and flaky.
