  • 1 small yellow onion, diced
  • 1 jalapeño pepper, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts or 2 cups shredded chicken
  • Spices: cayenne pepper, cumin, hot sauce, taco seasoning
  • 1.5 cups shredded cheddar cheese
  • â…“ cup cream cheese, softened
  • Corn or flour tortillas for serving

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the onion and jalapeño until softened. Add garlic and cook for an additional minute.
  2. Stir in tomato paste until combined. Add corn, Rotel tomatoes (with juices), black beans, and chicken broth.
  3. Bring to a simmer and add the chicken breasts (or shredded chicken). Cook for about 25 minutes until the chicken is cooked through.
  4. Shred the chicken (if using whole breasts) and return it to the pot. Reduce heat to low and stir in cheddar cheese and cream cheese until melted and smooth.
  5. Season with cayenne pepper, cumin, hot sauce, and taco seasoning to taste.
  6. Serve hot with crispy tortilla strips on top.
