  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. In a mixing bowl, combine ground meat, chopped onion, minced garlic, breadcrumbs, egg, salt, and pepper. Mix until just combined.
  2. Shape the mixture into small meatballs (about 1 inch in size).
  3. Heat olive oil in a skillet over medium-high heat. Brown the meatballs on all sides for about 3–4 minutes each.
  4. Remove meatballs from the skillet and set aside.
  5. In the same skillet, sauté minced garlic and ginger until fragrant (about 30 seconds).
  6. Whisk in red curry paste and coconut milk until smooth.
  7. Stir in soy sauce and lime juice; bring to a gentle simmer for about 5 minutes.
  8. Return meatballs to the skillet; cover and simmer for an additional 10–15 minutes until cooked through.
