  • 4 cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Preheat the air fryer to 400°F (200°C) for optimal crispiness.
  2. Pat cod fillets dry and season both sides with salt and pepper.
  3. In a shallow bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, paprika, salt, and pepper.
  4. In another bowl, combine mayonnaise, Dijon mustard, and lemon juice.
  5. Brush one side of each cod fillet with the mayonnaise mixture and then press into the breadcrumb mixture until fully coated.
  6. Lightly mist the air fryer basket with cooking spray. Place fillets in a single layer and cook for 10-12 minutes until golden brown and fish reaches an internal temperature of 145°F (63°C).
  7. Garnish with fresh parsley if desired and serve hot with lemon wedges.
