  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups parmesan cheese, grated (divided)
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Cut the peeled carrots into 2-inch sections and then slice them lengthwise in half.
  3. In a large mixing bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and fresh rosemary.
  4. Toss the carrot halves in the mixture until evenly coated.
  5. Spread 1½ cups of grated parmesan cheese onto the lined sheet pan, then place the carrots cut-side down on top of the cheese layer.
  6. Sprinkle the remaining parmesan over the arranged carrots.
  7. Bake for 30-35 minutes until the tops are golden brown and bubbly.
