  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 14.5 oz can diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • Corn tortillas
  • Oil for frying
  • Cilantro and diced onion for garnish

Instructions

  1. Soak dried guajillo and ancho chilies in hot water for about 15 minutes until softened.
  2. Blend soaked chilies, onion, garlic, diced tomatoes, and some soaking liquid until smooth.
  3. Place beef chuck roast in the crock pot and pour the chili mixture over it.
  4. Add beef broth, apple cider vinegar, oregano, cumin, bay leaves, salt, and pepper; mix gently.
  5. Cover and cook on low for 8–10 hours until meat is tender.
  6. Shred the beef and return it to the sauce; stir well.
  7. Fry corn tortillas in oil until crispy; fill with shredded beef mixture.
  8. Top with cilantro and diced onion before serving.
