  • 1 lb medium shrimp (peeled and deveined)
  • 1/2 cup buttermilk
  • 3/4 cup cornstarch
  • 1/2 cup mayonnaise
  • 1/4 cup chili-garlic sauce
  • 2 teaspoons sriracha
  • 1 tablespoon pure honey
  • 1 teaspoon paprika
  • 1 teaspoon lemon juice
  • Vegetable oil (for frying)
  • Salt and pepper (to taste)

Instructions

  1. In a mixing bowl, soak shrimp in buttermilk for 10–15 minutes.
  2. In another bowl, whisk together cornstarch, cayenne pepper (or paprika), salt, and pepper.
  3. Drain excess buttermilk from shrimp, then coat evenly in the cornstarch mixture. Refrigerate for 20–30 minutes.
  4. Heat vegetable oil in a wide pot to 375°F.
  5. Fry shrimp in batches for 1–2 minutes per side until golden brown. Drain on paper towels.
  6. In a separate bowl, mix mayonnaise, chili-garlic sauce, sriracha, honey, paprika, lemon juice, salt, and pepper to make the Bang Bang sauce.
  7. Toss fried shrimp in the sauce until well coated and serve immediately.
