  • 1 can (about 400g) drained cannellini beans
  • 1 leek, sliced
  • 2 cloves garlic, minced
  • 1 sprig rosemary, chopped
  • 1 sprig thyme, chopped
  • 1 tablespoon butter
  • 2 tablespoons white grape juice
  • 3/4 cup vegetable broth
  • 30g cheddar cheese, grated
  • Juice and zest of half a lemon
  • Handful parsley, finely chopped

Instructions

  1. In a large skillet over medium heat, melt the butter until bubbling. Add the sliced leeks and minced garlic; sauté for about 5 minutes until softened.
  2. Stir in the chopped rosemary and thyme; season with salt and pepper. Sauté for another minute to infuse flavors.
  3. Pour in the white grape juice and let simmer for 2 minutes to reduce slightly.
  4. Add the vegetable broth and drained cannellini beans; stir gently to combine. Simmer for about 5 minutes until heated through.
  5. Remove from heat; stir in grated cheddar cheese, lemon juice, zest, and parsley before serving.
