  • 4 Roma tomatoes
  • ½ seedless English cucumber
  • 1 ½ cups freshly crumbled feta cheese
  • ½ cup chopped green onion
  • Juice and zest of 1 lemon
  • ¼ cup extra virgin olive oil
  • 1 tsp apple cider vinegar (optional)
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp dried oregano leaves
  • ⅛ tsp dried dill
  • ½ tsp dried basil (or 1 TBSP fresh basil)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette diagonally into ¾-inch thick pieces and place them on a baking sheet. Drizzle lightly with olive oil and toast in the oven for about 8-10 minutes until golden brown.
  2. In a mixing bowl, combine diced Roma tomatoes, chopped cucumber, crumbled feta cheese, and green onions.
  3. Squeeze in the lemon juice and add remaining olive oil. Stir gently to combine all ingredients.
  4. Season with garlic powder, salt, black pepper, oregano, dill, and basil; mix well.
  5. Top each toasted baguette slice with the vegetable mixture just before serving.
