  • 12 boneless skinless chicken thighs (1.3 kg)
  • 1/8 cup olive oil
  • 2 tablespoons honey Dijon mustard
  • 6 cloves minced garlic
  • Zest from two lemons
  • 1/2 tablespoon salt
  • Dry oregano (to taste)
  • 1 cup water or stock

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine chicken thighs with olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and oregano. Mix until well coated.
  3. Let the chicken marinate for at least one hour or overnight for best results.
