  • 1/2 cup gluten-free breadcrumbs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 1/2 pounds ground chicken
  • 1 small shallot (minced)
  • 4 cloves garlic (minced)
  • 1/4 cup grated dairy-free parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh chopped basil
  • 2 tablespoons fresh chopped parsley
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine breadcrumbs and milk; let sit for 5 minutes.
  3. Add ground chicken, shallots, garlic, parmesan cheese, lemon juice and zest, chopped herbs, salt, pepper flakes (if using), and olive oil; mix until just combined.
  4. Form mixture into about 15 meatballs (2 ounces each) and place on the prepared baking sheet.
  5. Drizzle lightly with olive oil before baking for 15-18 minutes or until golden brown and cooked through.
