  • 8 to 10 boneless skinless chicken thighs
  • 1 cup plain full-fat Greek yogurt
  • 3 to 4 sprigs fresh dill
  • 1 minced shallot
  • 3 tablespoons minced garlic
  • Juice and zest of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried oregano

Instructions

  1. Pat chicken thighs dry with paper towels.
  2. In a mixing bowl, whisk together Greek yogurt, dill, shallots, garlic, lemon juice and zest, salt, pepper, paprika, and oregano until well combined.
  3. Coat the chicken thighs thoroughly in the marinade. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  4. Preheat the grill to approximately 400°F (200°C).
  5. Grill the marinated chicken thighs for about 8 to 10 minutes on each side until they reach an internal temperature of at least 165°F (74°C).
  6. Let the chicken rest for at least five minutes before serving.
