4 skinless boneless chicken breasts
1/2 cup fresh parsley (finely chopped)
1/2 cup fresh cilantro (finely chopped)
2 green onions (finely chopped)
2–3 cloves garlic (minced)
1 red chili (deseeded and finely chopped)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/3 cup olive oil
1 tablespoon grape juice vinegar
Kosher salt and ground pepper to taste
Instructions
In a mixing bowl, combine parsley, cilantro, green onions, garlic, red chili, oregano, basil, olive oil, grape juice vinegar, salt, and pepper. Mix well to create the chimichurri sauce.
Marinate the chicken breasts with one-third of the chimichurri mixture in a separate bowl or zip-top bag for at least 15 minutes.
Preheat your grill pan or outdoor grill over medium-high heat.
