Instructions
1. Marinate chicken: In a zip-top plastic bag, combine chicken, salsa, lime juice, olive oil, salt, and pepper. Seal and refrigerate for at least 30 minutes.
2. Prepare the grill: Preheat grill to medium-high heat; lightly oil the grates.
3. Grill bell peppers: Toss sliced bell peppers in olive oil and season with salt and pepper. Grill for about 5–10 minutes until tender-crisp.
4. Grill chicken: Remove chicken from marinade; grill for 4–5 minutes per side or until cooked through (internal temperature reaches 165°F).
5. Assemble: Serve grilled chicken topped with additional salsa, diced mango, pineapple tidbits, and fresh cilantro.
