  • 4 bell peppers
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat oven to 400°F (204°C). Halve the bell peppers lengthwise and remove seeds. Place cut-side up on a parchment-lined baking sheet and drizzle with olive oil.
  2. Bake for about 20 minutes until slightly softened.
  3. In a large mixing bowl, microwave spinach until wilted (about 15 seconds), then chop it roughly.
  4. Combine spinach with ricotta, mozzarella, parmesan, green onions, basil, dried herbs, eggs, salt, pepper, and breadcrumbs in the bowl; mix well.
  5. Generously fill each roasted pepper half with the mixture.
  6. Sprinkle remaining breadcrumbs on top for added crunch.
  7. Bake stuffed peppers at 350°F (176°C) for about 30 minutes until golden brown.
