1 lb lean ground beef (or turkey)
1/2 cup low-fat cheddar cheese
1/2 cup breadcrumbs (or gluten-free alternative)
4 jalapeños, seeded and diced
4 egg whites
6 tbsp fat-free cream cheese
Pinch of salt and pepper
Instructions
Preheat your oven to 400°F (200°C) and grease a muffin tin.
In a mixing bowl, combine ground beef, cheddar cheese, breadcrumbs, jalapeños, egg whites, salt, and pepper until well mixed.
Fill each muffin cup halfway with the mixture. Add a dollop of cream cheese on top before adding more meat mixture until almost full.
Bake for 20-25 minutes or until golden brown.
Let cool for 5-10 minutes before removing from the muffin tin.
