  • 9 tbsp unsalted butter
  • 1 1/4 cups sugar
  • 1/4 cup cocoa powder (sifted)
  • 1/2 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/8 tsp salt
  • 1/4 tsp espresso powder
  • 1/2 tsp vinegar
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 9 oz cream cheese (room temperature)
  • 3 tbsp sugar (for cream cheese filling)
  • 1/2 tsp vanilla (for cream cheese filling)
  • 1 egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, cream together unsalted butter and sugar until light and fluffy.
  3. Add cocoa powder, vanilla extract, red food coloring, salt, espresso powder, vinegar, and eggs. Mix until combined.
  4. Gradually fold in all-purpose flour until just incorporated.
  5. In another bowl, mix cream cheese with sugar, vanilla extract, and egg yolk until smooth.
  6. Pour half of the brownie batter into the prepared pan. Add dollops of the cream cheese mixture on top. Cover with remaining brownie batter and swirl gently.
  7. Bake for about 20 minutes or until a toothpick comes out mostly clean.
  8. Allow cooling before cutting into squares.
