  • 2/3 cup berry jam (blueberry, strawberry, raspberry, etc.)
  • 2 tsp cornstarch
  • 1 large egg
  • 1 Tbsp water
  • 1 1/2 Tbsp salted butter (melted)
  • 1 cup powdered sugar
  • 1 1/2 Tbsp half-and-half
  • 1/4 tsp vanilla extract
  • 1/8 tsp almond extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface and cut into six equal rectangles (about 3×5 inches).
  3. In a small bowl, whisk together the berry jam and cornstarch until well combined.
  4. Place about 1.5 tablespoons of the jam mixture onto three pastry rectangles, leaving space around the edges.
  5. Seal the edges carefully and brush each strudel with an egg wash made from whisking together the egg and water.
  6. Bake in the preheated oven for approximately 20 minutes or until golden brown.
  7. Allow to cool slightly before drizzling with icing made from powdered sugar, half-and-half, vanilla extract, and almond extract.
