  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. In a large soup pot or Dutch oven over medium-high heat, cook the turkey or chicken sausage until browned, about 5 minutes. Stir occasionally.
  2. Add chopped onions and cook until translucent, about 5 minutes.
  3. Stir in minced garlic and optional red pepper flakes; cook for another 30 seconds until fragrant.
  4. Add uncooked orzo pasta, then pour in chicken broth and heavy cream. Bring to a gentle simmer.
