  • ⅓ cup soy sauce
  • ⅓ cup water
  • ⅓ cup light brown sugar (packed)
  • 1 teaspoon sesame oil
  • 2 teaspoons garlic (minced)
  • ½ yellow onion (diced)
  • 2 large jalapeño peppers (sliced into thin rounds)
  • Sesame seeds (for garnish)
  • Cooked white rice (for serving)

Instructions

  1. In a large mixing bowl, coat chicken thighs with cornstarch, kosher salt, and black pepper until evenly covered.
  2. In a medium mixing bowl, whisk together soy sauce, water, brown sugar, sesame oil, and minced garlic until smooth.
  3. Heat olive oil in a large nonstick skillet over medium-high heat. Add the coated chicken pieces and cook for about 2–3 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  4. In the same skillet, add diced onions and sliced jalapeños; sauté for about 4–6 minutes until softened.
  5. Return the cooked chicken to the skillet along with the prepared sauce mixture. Stir to coat everything evenly and cook for another 2–3 minutes until heated through.
  6. Serve over cooked white rice and garnish with sesame seeds.
