  • 810 hot cherry peppers (finely chopped)
  • 23 banana peppers (finely chopped)
  • 1 small green bell pepper (finely chopped)
  • 1 small white onion (very finely minced)
  • 3 cloves garlic (minced)
  • ½ cup white vinegar
  • ¼ cup olive oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • Optional: crushed red pepper flakes and pickled jalapeño brine

Instructions

  1. Finely chop all peppers, onion, and garlic.
  2. Heat olive oil in a saucepan over medium heat; add minced onions and sauté until translucent (about 3 minutes).
  3. Stir in minced garlic and cook until fragrant (about 30 seconds).
  4. Add chopped peppers to the pan; stir gently for about 2 minutes until softened.
  5. Pour in white vinegar, then add sugar, salt, oregano, black pepper, and optional ingredients. Stir well to combine.
  6. Lower the heat and let mixture simmer for 10–12 minutes until thickened slightly.
  7. Allow relish to cool completely before transferring to a clean glass jar. Refrigerate for at least 12 hours before using.
