  • 1 cup Greek yogurt
  • 1/2 cup cucumber (grated and squeezed of excess liquid)
  • 1.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 1.5 tsp garlic (finely minced)
  • 1/2 tsp salt
  • 1 tbsp dill (freshly chopped for best flavor)
  • 2 cups cooked rice
  • 2.5 cups tomatoes (diced into 1/2-inch pieces)
  • 2 cups cucumber (diced into 1/2-inch pieces)
  • 4 cups lettuce (torn or chopped)
  • 1 cup red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. In a large mixing bowl, combine olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes to create the marinade. Add chicken pieces and mix thoroughly to coat well. Marinate for at least 30 minutes.
  2. Prepare tzatziki sauce by mixing Greek yogurt, grated cucumber (excess moisture removed), lemon juice, minced garlic, salt, and dill in a separate bowl. Refrigerate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and add marinated chicken in a single layer. Cook for about 6–8 minutes until golden brown on one side, then flip and cook for another 4–5 minutes until the internal temperature reaches 165°F.
  4. To assemble your bowls, place a generous portion of rice at the bottom. Top with grilled chicken, diced tomatoes, cucumbers, lettuce, sliced red onions, crumbled feta cheese, and drizzle with tzatziki sauce.
