- 2 (15oz) cans chickpeas (drained and rinsed)
- 6 oz turkey slices (sliced or julienned)
- 1 ½ cups mini mozzarella balls (halved or quartered)
- ⅓ cup sliced sundried tomatoes
- ¾ cup chopped artichokes (marinated and drained)
- ¼ cup chopped fresh basil
- ¼ cup extra-virgin olive oil
- 2 tablespoons white grape juice vinegar (or apple cider vinegar)
- 1 teaspoon dry mustard powder
- Flaky salt and pepper to taste
- In a large glass bowl, combine drained chickpeas, turkey slices, mozzarella balls, sundried tomatoes, artichokes, and fresh basil.
- In a separate jar, mix olive oil, vinegar, mustard powder, salt, and pepper. Shake until well combined.
- Pour the dressing over the salad ingredients and gently toss until all components are evenly coated.
