  • 2 (15oz) cans chickpeas (drained and rinsed)
  • 6 oz turkey slices (sliced or julienned)
  • 1 ½ cups mini mozzarella balls (halved or quartered)
  • ⅓ cup sliced sundried tomatoes
  • ¾ cup chopped artichokes (marinated and drained)
  • ¼ cup chopped fresh basil
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons white grape juice vinegar (or apple cider vinegar)
  • 1 teaspoon dry mustard powder
  • Flaky salt and pepper to taste

Instructions

  1. In a large glass bowl, combine drained chickpeas, turkey slices, mozzarella balls, sundried tomatoes, artichokes, and fresh basil.
  2. In a separate jar, mix olive oil, vinegar, mustard powder, salt, and pepper. Shake until well combined.
  3. Pour the dressing over the salad ingredients and gently toss until all components are evenly coated.
