Instructions

  1. In a large soup pot over medium-high heat, melt butter with olive oil. Add celery, carrots, and onion; sauté for about 5–7 minutes until softened.
  2. Stir in minced garlic and flour; cook for another minute until fragrant.
  3. Gradually pour in chicken broth while stirring to dissolve the flour completely.
  4. Add Italian seasoning and raw chicken breasts; bring to a boil, then reduce heat to low and simmer for approximately 15 minutes until chicken is tender.
  5. Remove chicken from the pot; shred it into bite-sized pieces before returning it to the soup.
  6. Stir in uncooked orzo; cook for about 10 minutes while maintaining a gentle simmer.
