  • 2 cups water (or vegetable broth)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water using a fine-mesh strainer. Combine it with water (or broth) in a saucepan over medium-high heat. Bring to a boil, then reduce the heat to low and cover. Simmer until the water is absorbed (about 15 minutes). Fluff with a fork and allow to cool.
  2. While the quinoa cools, dice the cucumber, finely chop the red onion, and chop the parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and pepper until well combined.
  4. In a large mixing bowl, combine cooled quinoa, chickpeas, cucumber, red onion, parsley, and dressing. Toss gently to mix.
  5. Optionally add crumbled feta cheese for creaminess before serving.
