  • 1 head cauliflower (or 6 cups steamed cauliflower rice)
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup sour cream
  • 2 teaspoons dry ranch seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 tablespoons real bacon bits (divided)
  • 1/4 cup whole whipping cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Steam the cauliflower florets until fork-tender, approximately 8–10 minutes. Transfer to a large mixing bowl and mash until creamy.
  3. Stir in 3/4 cup of cheddar cheese, sour cream, ranch seasoning, onion powder, garlic powder, and half of the bacon bits until well combined.
  4. If using, mix in the heavy cream for extra richness.
  5. Transfer the mixture to a small baking dish and smooth out the top.
  6. Bake for about 35 minutes or until bubbly and golden on top.
  7. In the last few minutes of baking, sprinkle remaining cheddar cheese and bacon bits over the casserole.
  8. Allow to cool slightly before serving.
