  • 4 boneless, skinless chicken breasts
  • 1 cup artichoke hearts (canned or frozen, drained)
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup diced onion
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Marinate the chicken in a mixture of lemon juice, olive oil, minced garlic, salt, and pepper for at least 20 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté diced onion until translucent, about 3 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Place marinated chicken in the skillet, cooking for about 6–7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Add artichokes and olives to the skillet; stir gently to combine.
  6. Pour in chicken broth along with lemon zest; simmer for another 2–3 minutes until everything is heated through.
  7. Garnish with fresh parsley before serving.
