- 4 boneless, skinless chicken breasts
- 1 cup artichoke hearts (canned or frozen, drained)
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup diced onion
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
- Marinate the chicken in a mixture of lemon juice, olive oil, minced garlic, salt, and pepper for at least 20 minutes.
- Heat olive oil in a large skillet over medium-high heat. Sauté diced onion until translucent, about 3 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Place marinated chicken in the skillet, cooking for about 6–7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
- Add artichokes and olives to the skillet; stir gently to combine.
- Pour in chicken broth along with lemon zest; simmer for another 2–3 minutes until everything is heated through.
- Garnish with fresh parsley before serving.
