  • 1 box store-bought pie dough (2 sheets)
  • 2 tbsp unsalted butter (regular or plant-based)
  • 2 1/2 cups finely chopped Fuji or Honeycrisp apples (about 2 large apples)
  • 1/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • Juice of 1/2 lemon
  • 1/2 tsp cornstarch mixed with 1 tbsp water
  • 1 large egg (for egg wash)
  • 1/2 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, melt the butter. Add chopped apples, brown sugar, cinnamon, and lemon juice; cook for about 10 minutes until apples are tender.
  3. Stir in the cornstarch mixture to thicken; remove from heat and let cool.
  4. Roll out one sheet of pie dough on a floured surface and cut into apple shapes using a cookie cutter.
  5. Place half of the shapes on the lined baking sheet. Fill each with about one tablespoon of apple filling.
  6. Cut slits in the remaining shapes and place them on top of the filled ones; seal edges by pressing down firmly.
  7. Brush with egg wash and sprinkle granulated sugar mixed with cinnamon on top.
  8. Bake for 12-14 minutes until golden brown; cool slightly before serving.
