  • 1 and 2/3 cup heavy cream, chilled
  • About 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla extract
  • 3 cups graham cracker crumbs
  • ½ cup + 2 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2/3 cup diced fresh strawberries
  • 1 cup whipped cream, freshly made or store-bought
  • 2 (3 oz package) berry blue vegan Jello
  • 1 and 1/4 cups boiling water
  • 2 cups blueberry pie filling
  • 1 cup canned crushed pineapple, drained
  • Fresh strawberries halved
  • Fresh blueberries
  • ¼ cup chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine graham cracker crumbs and melted butter until evenly coated. Press into the bottom of a 9×13 inch baking dish to form the base layer.
  2. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  3. In another bowl, blend softened cream cheese with powdered sugar and vanilla until smooth. Fold in half of the whipped cream and diced strawberries.
  4. Spread half of the cream cheese mixture over the graham cracker crust, followed by half of the blueberry pie filling.
  5. Repeat the layers: graham crackers, cream mixture, and blueberry filling until all ingredients are used.
  6. Cover and refrigerate for at least 3 hours or overnight for best results.
