  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 8 oz uncooked penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil and butter over medium-high heat. Add diced chicken seasoned with salt, pepper, and Italian seasoning. Cook until golden brown and fully cooked (about 7 minutes). Remove chicken and set aside.
  2. Lower the heat slightly and add minced garlic to the pot. Sauté until fragrant (about 1 minute).
  3. Pour in chicken broth and heavy cream; stir well and bring to a light simmer.
  4. Add uncooked penne pasta to the pot. Cover and cook for about 10-12 minutes until pasta is al dente, stirring occasionally.
  5. Gradually mix in freshly grated Parmesan cheese until melted into the sauce.
  6. Return cooked chicken to the pot; gently fold it into the pasta mixture. Allow warming through for another couple of minutes.
  7. Garnish with chopped parsley if desired before serving.
