Peach Honey Dijon Balsamic Vinaigrette is a vibrant and flavorful dressing that captures the essence of summer in every drop. This easy-to-make vinaigrette combines the natural sweetness of ripe peaches with the tangy notes of Dijon mustard and white balsamic vinegar, creating a delightful contrast that elevates salads, grilled chicken, or roasted vegetables.

  • 2 ripe peaches, diced
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white balsamic vinegar (or cider vinegar)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon tamari or soy sauce
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. If desired, grill the diced peaches over medium heat for about 3–4 minutes per side until softened. Alternatively, use fresh diced peaches.
  2. In a blender, combine the grilled or fresh peaches with honey, Dijon mustard, vinegar, olive oil, tamari (or soy sauce), minced garlic, salt, and pepper.
  3. Blend on low speed and gradually increase until smooth and creamy.
  4. Adjust consistency with water or additional vinegar if too thick.
  5. Transfer to an airtight container and refrigerate for at least one hour to allow flavors to meld before serving.
