  • ½ cup water
  • â…” cup sugar
  • 1 tbsp kosher salt
  • 1 tsp yellow mustard seeds
  • 2 garlic cloves (crushed)
  • 2 lbs sweet peppers (mixed colors)
  • 1 onion (preferably red)

Instructions

  1. In a pot, combine apple cider vinegar, water, sugar, kosher salt, yellow mustard seeds, and crushed garlic cloves. Heat on medium until dissolved.
  2. Remove from heat and allow the brine to cool slightly.
  3. Slice sweet peppers and onion thinly.
  4. Pack the sliced vegetables tightly into sterilized jars.
  5. Pour the cooled brine over the peppers and onions until fully submerged.
  6. Seal the jars and refrigerate for at least 24 hours before enjoying.
