  • 1 cup full-fat coconut milk
  • 1/2 cup fish stock or water
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • Zest and juice of 2 limes
  • 1 tablespoon soy sauce (or tamari)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Add chopped onion and sauté until translucent (3-5 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Pour in coconut milk and fish stock (or water), then add soy sauce. Stir gently and bring to a simmer.
  4. Zest both limes into the mixture, followed by squeezing their juice in as well.
  5. Carefully place salmon fillets into the simmering sauce, cover, and poach on low heat for about 10-12 minutes until opaque throughout.
