Quick & Easy Lo Mein is a delightful homemade dish that captures the essence of vibrant Asian flavors in just 20 minutes. This savory stir-fry features thick noodles tossed with a colorful medley of fresh vegetables, all coated in a rich sauce that tantalizes your taste buds.

  • 1 lb lo mein noodles (or miki noodles/spaghetti)
  • 1 cup napa cabbage (chopped)
  • 1 cup red bell pepper (julienned)
  • ¾ cup snow peas (trimmed)
  • ½ cup carrot (julienned)
  • 4 button mushrooms (sliced)
  • 1 green onion (chopped)
  • 1 tablespoon vegetable oil
  • 2 tablespoons regular soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon vegetarian stir fry sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic (minced)
  • ½ tablespoon cornstarch
  • ¼ cup chicken stock

Instructions

  1. In a small bowl, mix together the soy sauces, stir fry sauce, sesame oil, and set aside.
  2. Soak the lo mein noodles in boiling water for about 15 seconds until al dente; drain and set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add julienned carrots first, then add red bell peppers, snow peas, mushrooms, and napa cabbage. Sauté for about 2 minutes until slightly softened.
  4. Pour in cold water to create steam; cook for another minute until veggies are tender-crisp.
  5. Lower heat to medium and add soaked noodles into the skillet along with the prepared sauce mixture and cornstarch dissolved in chicken stock. Toss everything gently to combine thoroughly.
  6. Cook for an additional minute to warm through, then garnish with chopped green onions before serving.
